Ingredients

  • 1/2 cup Ground Flax
  • 1/2 cup Hemp Hearts
  • 1/2 cup Ground Almonds
  • 1/2 cup Organic Peanut Butter
  • 1/2 cup Pumpkin Seeds (we grind them down for extra picky eaters!)
  • 1 cup Organic Oats
  • 1.5 tbsp Chia Seeds
  • 1 tbsp Ground Cinnamon
  • 1 tbsp Natural Vanilla Extract
  • 1 tsp Baking Powder
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup Organic Honey
  • 1 Egg

Instructions

  • Preheat your oven to 180°C (350°F).
  • In a large mixing bowl, combine all the ingredients. Get your hands in there and squish everything together until it forms a dough-like consistency.
  • Divide the dough into 8 equal portions and shape them into cookies.
  • Place the cookies on a baking sheet lined with parchment paper.
  • Bake for 8-10 minutes, or until the edges are lightly golden.
  • Let the cookies cool for a few minutes before enjoying.

Notes

  • Get Creative: Feel free to swap out the pumpkin seeds for sunflower seeds or add a handful of dark chocolate chips for a little extra indulgence.
  • Grind It Down: If you’ve got a picky eater like Karden, try grinding the pumpkin seeds into a fine texture before mixing them in. It’s an easy way to sneak in the nutrients without anyone noticing!
  • Storage: Keep these cookies in an airtight container for up to a week—or freeze them for a quick snack later.
