Measuring Spoons
1 Baking Sheet
- 1/2 cup Ground Flax
- 1/2 cup Hemp Hearts
- 1/2 cup Ground Almonds
- 1/2 cup Organic Peanut Butter
- 1/2 cup Pumpkin Seeds (we grind them down for extra picky eaters!)
- 1 cup Organic Oats
- 1.5 tbsp Chia Seeds
- 1 tbsp Ground Cinnamon
- 1 tbsp Natural Vanilla Extract
- 1 tsp Baking Powder
- 1/4 cup Extra Virgin Olive Oil
- 1/4 cup Organic Honey
- 1 Egg
Preheat your oven to 180°C (350°F).
In a large mixing bowl, combine all the ingredients. Get your hands in there and squish everything together until it forms a dough-like consistency.
Divide the dough into 8 equal portions and shape them into cookies.
Place the cookies on a baking sheet lined with parchment paper.
Bake for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool for a few minutes before enjoying.
- Get Creative: Feel free to swap out the pumpkin seeds for sunflower seeds or add a handful of dark chocolate chips for a little extra indulgence.
- Grind It Down: If you’ve got a picky eater like Karden, try grinding the pumpkin seeds into a fine texture before mixing them in. It’s an easy way to sneak in the nutrients without anyone noticing!
- Storage: Keep these cookies in an airtight container for up to a week—or freeze them for a quick snack later.
- Kid-Friendly Add-Ons: Let the kids sprinkle a little shredded coconut or drizzle some melted chocolate on top for extra fun.
